I am making a roast in my oven as we speak. When is the best time to place vegetables in the roasting pan so the vegetables are roasted. Currently the meat thermometer reads about 145 degrees and it is being cooked at 350 degrees. Please let me know. If at all possible please tell me temperature wise.

IF it’s 145 already, you have already cooked the meat too long to add the veggies. I always add veggies when I start the meat.
