    I have a convection oven that I bought at JCP and its suppose to toast, bake, broil, defrost, keep warm and rotisserie. Here’s the thing, I have started cooking meat loaf and do not know which one to use. Which one do I use and how do I tell if its cooked? I don’t have a meat thermometer so how can i tell if my meatloaf is done.

    One other question: How can I get my meats to secrete more juices while cooking it in my convection oven?

      I had found a recipe online where you season a 4 to 5 pound roast with garlic powder, pepper and some other seasoning, then brown all sides of the roast in a big pan. After doing this, you put the roast with like a 1/2 cup of beef broth in a crock pot, put on the cover and slow cook it for about 6 to 8 hours. They also said to use a meat thermometer and cook it to an internal temperature of about 160′ F. It should come out medium rare. They said not to salt the meat until just before serving it because it dries the meat out. Does this sound familiar to anyone?

      This is not how I make it. So I can’t speak for this particular recipe. However, I make mine as such:
      Season all sides of meat (same size) with seasonings of choice. Brown in very hot pan (I use a cast iron skillet.) Then I put it in a 475 degree oven for 45 min (uncovered.) I then reduce heat to 375 for 2 hours or internal temp reaches 170. Take out of oven and let sit for a few minutes. Then I wrap it tightly in foil and refrigerate overnight. The next day I slice it thin across the grain and place slices in boiling “au juice” for about 30 seconds to heat up. My family loves it!

        so ima freak about food poisoning and like to measure the degrees of my meat when i cook to prevent it.well, i was wondering if there was such a thermometer for liquids?

        and can i use a meat thermometer for potatoes? a couple of people have been getting sick from them and i want to cook it just right.

        Also, i am making a tuna and mac and cheese mixture, and want to cook it in the oven(to prevent potential scombroid poisoning which cannot be detected by taste,smell or appearance) can this particular poisoning be killed with heat?

        i know im paranoid but whatever.rather be too cautious than sick!

        I know there are meat thermometers they might work for potatoes or other foods. I don’t know about potato thermoms.

          I need some basic cooking information.
          Is it best to wrap the roast in tin foil or not? If so, what is best to use in prepping the meat? I’m only looking for basics here. Such as salt and pepper if that, and if any oils to keep it from burning – defiinitely nothing fancy. Is it best to cook it for 10 minutes at 475, then 300 for about 20 min. or is there better temperature suggestions.
          Also, I just bought a meat thermometer, and learned to stick it into the deepest portions of the meat, and that probably the meat would heat up to 5-10 degrees more after I pull it out of the oven. Any more hints here.

          The best and perfect roast is with cooking bags~
          next to that would be cook at 350 degrees uncovered for maybe 20 minutes a pound medium rare~

            I cooked it a couple of days ago and am just starting to pull the meat off the bones today and it’s pink down my the drumsticks and even a little on the breast meat. The pink breast meat turned white after I heated it in my toaster oven. I had a meat thermometer in it after the initial cooking that read 160F (I head the bird out for about 15-20 minutes already when I checked the temp.) Can I put it back in to cook it more or not?

              Now I wonder why I bought these steaks, I either way over or under cook, flavorless meat every time I try and bbq (or cook in any other way for that matter) I never spend this much on steaks but I wanted to have a special dinner this evening for my family. I purchased some really pretty NY steaks yesterday and would love to BBQ them to a medium. I have a gas bbq grill. I have heard so many things ie. turn your steak only once or flip repeatedly. Use a dry rub, others say to always use a wet marinade. Do I refrigerate my meat until I’m ready to grill? Some suggest bringing the meat to room temperature first. I’ve also heard you should never salt a steak until after you are done grilling as the salt will pull out all the juices. How hot should I have the grill, and do I adjust the temperature during the cooking process? I do have a meat thermometer if that helps. I hope someone is willing to part with some great grilling secrets. I would also appreciate any seasoning or marinade suggestions, we are not “hot, spicy” fans, but I want the meat to be flavorful.

                Nonstick cooking spray
                2 tablespoons packed dark brown sugar
                2 teaspoons paprika
                2 teaspoons garlic powder
                1-1/2 teaspoons salt
                1 teaspoon ground cumin
                1 teaspoon chili powder
                1 teaspoon freshly ground black pepper
                2 3- to 3 1/2-pound bone-in turkey breast portions with bone
                1 cup chopped onion (1 large)
                1 tablespoon cooking oil
                1 16-ounce can whole cranberry sauce
                1/3 cup bottled chili sauce
                1 tablespoon cider vinegar
                1 teaspoon Worcestershire sauce
                Directions
                1. Preheat oven to 400 degrees F. Coat a large shallow roasting pan and roasting rack with cooking spray. In a small bowl combine brown sugar, paprika, garlic powder, salt, cumin, chili powder, and 3/4 teaspoon of the pepper. Place turkey, bone side down, on rack in prepared pan. Set aside.

                2. Starting at the breast bone of turkey portions, use your fingers to loosen the skin from the meat; leave skin attached at the top. Spread spice mixture evenly under skin over the breast meat. Insert a meat thermometer into thickest part of the breast. (The thermometer should not touch bone.)

                3. Roast turkey, uncovered, on the lower rack of the oven for 20 minutes. Reduce the oven temperature to 350 degrees F; roast for 60 to 90 minutes longer or until juices run clear and turkey is no longer pink (170 degrees F), occasionally spooning pan juices over turkey. Transfer turkey to a cutting board. Let stand, covered with foil, for 10 to 15 minutes before slicing.

                4. Meanwhile, for barbecue sauce, in a medium saucepan cook onion in hot oil over medium heat about 5 minutes or until tender. Add cranberry sauce, chili sauce, vinegar, Worcestershire sauce, and the remaining 1/4 teaspoon pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 5 minutes or until thickened, stirring occasionally. Serve with the turkey. Makes 10 servings.

                  1, if your heat until the meat thermometer reads 160 degF
                  the meat could be as high as = 160 + 2 degF = 162 degF
                  or as low as 160 – 2 degF = 158 degF

                  2, You want to ensure the ham is at least 160 degF, then you need to make sure the lowest reading is at least 160 degF.
                  Reading-2>160 degF
                  or Reading is > 162 degF

                    Trust me–If the thingy hasn’t popped up, it isn’t done. (My husband got tired of waiting one year and told me it was up. I believed him and we all ate from a turkey that was half cooked! Not only dangerous but EWWWW!!!) Does seem weird, though, that it’s been in soo long. I suggest turning up the oven temperature and keeping an eye on it. Don’t try that Butterball Hotline either. I tried it that year and couldn’t get through. Good luck!
